The recipe is very easy and fairly mess-free as everything can be combined in one big bowl! Here’s the recipe:
Makes approximately 16 muffins
1 cup whole wheat flour
1 cup quick oats
1 tablespoon baking powder
2 teaspoons baking soda
1.5 tbsp ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup chopped raw pecans
1/4 cup chopped raw almonds
1/2 cup honey/maple syrup
1/2 cup unsweetened applesauce
3/4 cup canned pumpkin
1 apple, shredded
1 tablespoon vanilla extract
1 cup grated carrot
1/2 cup dried fruit (I used golden raisins/unsweetened cherries)
1/2 cup shredded coconut
Preheat oven to 400 F. Combine flour, oats, nuts, baking soda, baking powder and spices in large bowl. Add remaining ingredients and stir until just combined. Bake at 400 F for 10 minutes, then decrease oven temperature to 350 F and bake for additional 10 minutes. Remove from oven and allow to cool (if you can resist them!)
These are delicious on their own or with creamy peanut butter or almond butter slathered on top. I freeze mine and pop them in the microwave for 30 seconds to 1 minute when I want one!
