This morning, I was feeling a bit inspired. After a long but fun weekend of spending time with friends and family in Indianapolis, I was ready to get back to my normal routine. I woke up before my alarm and despite fears of fatigue, managed to get in a good workout while still catching the Rachel Ray show at 9am. And what better way to enjoy the show than with a nice big cup of coffee and a delicious parfait. SO, I opened up the refrigerator hoping and praying that it still stored that yogurt and fruit that were there before I'd left town. THANK GOODNESS they were! And because this was turning into such a delightful morning, I decided to mix it up and use a cocktail glass for looks.
As layers of granola, yogurt, frozen cherries and blueberries topped with fresh bananas and strawberries and a sprinkle of coconut flakes filled the glass, I couldn't contain my excitement. I began to regret my attempts at beauty and was about ready to start shoving the food in my face. But, I resisted. With a full cup of coffee, a drizzle of honey on top of the parfait, and a spoon, I was ready to indulge. Words can't describe the shear pleasure of putting spoonful upon spoonful of this delicious creation into my mouth. Minutes..rather seconds later...it was gone. But with a stomach full of protein and healthy carbs, I was ready for the day ahead!
